There are few limits on how you can use avocados in a salad. However, always remember that these delicious avocados turn brown quickly, so peel and add them JUST before serving!
1. Cucumber and Avocado Salad

This is the ultimate cool and refreshing salad. If not serving the salad right away, do not add the avocado until the last minute.
Cooking Time: 10 minutes.
Yield: 4 servings.
Ingredients:
- 2 peeled and thinly sliced cucumbers
- 2 tsp. salt
- 1 diced sweet onion
- 1 chopped jalapeno pepper
- 2 tbsp. lime juice
- ¼ cup chopped fresh cilantro
- 1 tbsp. white wine vinegar
- 1/8 tsp. hot sauce
- 2 chopped medium tomatoes
- 2 diced avocados
Directions:
- Place the cucumber slices in a bowl and toss with the salt.
- Let sit for an hour, then drain the liquid – this will make the salad much less watery.
- Combine the onion, jalapeno pepper, lime juice, cilantro, white wine vinegar, hot sauce, and tomatoes.
- Make sure the cucumber slices are drained and add them to the salad.
- Toss with the avocadoes and serve immediately.
2. Avocado and Tuna Tapas

This is an incredibly elegant way to serve a tuna salad.
Cooking Time: 10 minutes.

Ingredients:
- 1 ½ cup drained and flaked canned tuna
- 2 tbsp. mayonnaise
- 4 chopped scallions
- ½ tsp. balsamic vinegar
- Salt and pepper to taste
- 2 halved avocados

- Combine all ingredients except the avocadoes in a bowl.
- Spoon the tuna mixture into the avocado halves.
3. Crab Avocado Salad

Lump crab is fine but using fresh flaked crab will truly elevate this salad to something special.

Ingredients:
- 12 oz. flaked crab meat
- 1 tbsp. olive oil
- 1 chopped sweet onion
- 1 chopped tomato
- Salt and pepper to taste
- 3 tbsp. chopped green olives
- 8 oz. baby spinach
- 1 peeled and cubed avocado
- 3 tbsp. chopped cilantro
- ¼ tsp. cayenne pepper or to taste
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- 2 oz. crumbled feta cheese
Directions:
- Heat the olive oil and sauté the onion for 5 minutes.
- Transfer the tomatoes to a salad bowl and season with salt and pepper.
- Add the flaked crab meat, tomatoes, olives, spinach, avocado, cilantro, and cayenne pepper.
- Drizzle the salad with olive oil and balsamic vinegar and top with feta cheese.
4. Watermelon, Mango, and Avocado Salad

There is nothing better during watermelon season.
Cooking Time: 10 minutes.
Yield: 4 servings.
Ingredients:
- 1 sliced onion
- 3 tbsp. orange juice
- 1 tbsp. olive oil
- Salt and pepper to taste
- 2 cups diced watermelon
- 2 diced mangos
- 3 tbsp. chopped basil
- 2 ripe chopped avocados
- 2 tsp. lemon juice
- Salt to taste
Directions:
- Combine the orange juice and olive oil and season with salt and pepper.
- Toss the watermelon and mango in the liquid and add the basil.
- Adjust for salt and add the avocados.

5. Avocado and Tomato Salad

This salad makes a great starter for a company dinner.

- 4 chopped tomatoes
- 4 chopped avocados
- 1 chopped small red onion
- 1 chopped red bell pepper
- Pepper to taste
- ½ cup olive oil

A lot of superfoods for one salad.
Cooking Time: 20 minutes.

Ingredients:
Salad
- ¾ cup uncooked quinoa
- 1 1/4 cups chicken broth
- ¾ cup baby spinach
- 1 diced avocado
- 1 peeled and chopped cucumber
- 1 chopped red bell pepper
- 2 tbsp. crumbled feta cheese
Dressing
- ¼ cup olive oil
- 2 tbsp. lime juice
- 2 tsp. Dijon mustard
- 2 minced garlic cloves
- Salt and pepper to taste
Directions:
- Cooked the quinoa in the chicken broth by bringing the broth to a boil.
- Lower the temperature and simmer the quinoa for 20 minutes.
- Transfer the spinach to the platter and top with the cooked quinoa, avocado, cucumber, bell pepper, and feta cheese.
- Combine the dressing ingredients in a bottle, shake well, and drizzle over the salad.
8. Mexican Avocado Salad

You can roast the corn for an added flavor boost.

- 3 cubed avocados

- ½ cup cubed queso fresco cheese

- 1 tablespoon olive oil
