  4. Add ¾ of the nuts and fold them into the cookie mixture.

20. Strawberry and White Chocolate Chip Cookies

These cookies are delicious and extra special because they’re made with real strawberries; there are no extracts involved.

Cooking Time: 10-15 minutes.
Yield: 8-10 servings.

Ingredients:

  • 35g of Freeze-Dried Strawberries
  • 175g of White Chocolate Chips
  • 2 Egg Yolks
  • 275g of Plain Flour
  • 2 Teaspoons of Baking Powder
  • A Pinch of Salt
  • 2 Teaspoons of Cornflour
  • 200g of Butter
  • 250g of Caster Sugar

Directions:

  1. Preheat the oven to 180 degrees Celsius and tip the strawberries into a food processor.
  2. Pulse the strawberries for 30-60 seconds or until they have a very fine, dust-like texture.
  3. Add the strawberry dust to a bowl and whisk with baking powder, flour, salt, and cornflour until fully combined.
  4. Use a stand mixer to beat sugar and butter together for 60 seconds. Add the egg yolks and slowly beat for 20 seconds.
  5. Pour in half of the strawberry mixture and beat for 30 seconds, then add the remaining strawberries and beat for another 30 seconds.
  6. Add chocolate chips to the bowl and gently fold in.
  7. Scoop 1 tablespoon of dough to create each cookie. Shape the dough however you prefer and space evenly onto a baking tray.
  8. Place the tray in the oven to bake for 13-15 minutes or until cooked through.
