Any football game needs a good tailgate party, and this chili is ideal for the crowd. This recipe makes a lot of chili, and you need a huge pot, or make it in two separate batches. It tastes even better the next day, so prepare it the day before the game and reheat.

Cooking Time: 3 hours 10 minutes.
Yield: 16 servings.

Ingredients:

  • 2 lbs. ground beef
  • 2 lbs. crumbled spicy sausage
  • ¼ cup olive oil
  • 2 chopped onions
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 4 chopped jalapeno peppers
  • 5 minced garlic cloves
  • 14.5 oz. chili beans
  • 14.5 oz. kidney beans
  • 14.5 oz. black beans
  • 28 oz. canned crushed tomatoes
  • 1 cup tomato paste
  • 2 cups tomato sauce
  • 2 12-oz. cans of beer
  • 1 cup water
  • ¼ cup chili powder
  • 2 tbsp. ground cumin
  • 1 tsp. cayenne pepper or to taste
  • Salt and pepper to taste
  • 2 cups shredded Cheddar cheese
  • 1 chopped onion

Directions:

  1. Brown the ground beef and spicy sausage in a skillet for 5 minutes and drain.
  2. Heat the olive oil in a very large pot.
  3. Add the onions, bell peppers, jalapeno peppers, and garlic.
  4. Stir and simmer for 5 minutes.
  5. Transfer the beef and sausage into the pot, along with the chili beans, kidney beans, black beans, crushed tomatoes, tomato paste, tomato sauce, beer, and water.
  6. Season with cumin, cayenne pepper, salt, and pepper.
  7. Simmer the chili for 3 hours.
  8. Refrigerate overnight.
  9. Heat the chili and top with shredded cheese and a chopped onion before serving.

Ingredients:

  • 2 lb. ground beef
  • 2 cups of chicken broth
  • 2 cups of water
  • 2 chopped onions
  • 2 cups tomato sauce
  • 1 tbsp. red cider vinegar
  • 1 tbsp. Worcestershire sauce
  • 5 minced garlic cloves
  • 2 tbsp. unsweetened cocoa
  • 1 tbsp. brown sugar
  • ¼ cup chili powder

Ingredients:

  • 3 lbs. ground beef
  • 2 cup tomato sauce

  • 14 oz. stewed tomatoes with liquid

  • 18 oz. egg noodles
  • 1 lb. ground beef

  7. Slowly pour in the broth, sugar, instant coffee, mustard, Worcestershire sauce, salt, and pepper.
  8. Simmer the sauce for 5 minutes, then remove from heat.
  9. Preheat the oven to 425 degrees.
  10. Cover the baking sheet with aluminum foil.
  11. Create 1-inch meatballs using your hands and transfer them to the baking sheet.

Ingredients:

  • 1 lb. ground beef
  • 1 beaten egg
  • 1 chopped onion
  • ¾ cup unflavored breadcrumbs
  • 3 tbsp. chopped parsley
  • ½ tsp. sage
  • Salt and pepper to taste
  • 1 cup water
  • 1 tbsp. cider vinegar
  • 1/3 cup ketchup
  • 3 tbsp. crushed pineapple bits
  • 1 tbsp. cornstarch
  • ½ cup brown sugar
  • 3 tbsp. soy sauce

Directions:

  1. Combine the beef, egg, onion, Panko breadcrumbs, parsley, sage, salt, and pepper in a bowl.
  2. Create 1-inch meatballs.
  3. Brown the meatballs in a skillet for 5 minutes.
  4. Stir together the water, vinegar, ketchup, pineapple bits, cornstarch, sugar, and soy sauce in a pan and add the meatballs.
  5. Simmer for 5 minutes.

19. Korean Ground Beef Bowl

A simple beef bowl is the perfect flavorful lunch.

Cooking Time: 15 minutes.
Yield: 4 servings.

Ingredients:

  • 1 tbsp. olive oil
  • 1 lb. ground beef
  • 4 minced garlic cloves
  • 1-inch nob grated ginger
  • 1 tbsp. sesame oil
  • ½ cup soy sauce
  • ½ tsp. red garlic chili sauce
  • ¼ cup brown sugar
  • ¼ cup sliced water chestnuts
  • ¼ cup chopped scallions
  • 4 cups prepared rice

Directions:

  1. Heat the olive oil in a large skillet and brown the beef for 5 minutes.
  2. Drain the grease.
  3. Stir in the garlic ginger, sesame oil, soy sauce, red garlic chili sauce, brown sugar, water chestnuts, and chopped scallions.
  4. Simmer for 8 minutes.
  5. Divide the rice into 4 bowls and top with the beef.

20. Stuffed Peppers

A tasty veggie stuffed with ground beef. For a lovely presentation, use different-colored peppers.

Cooking Time: 40 minutes.
Yield: 6 servings.

Ingredients:

  • 6 bell peppers
  • 1 tbsp. olive oil
  • 1 lb. ground beef
  • 1 chopped onion
  • 3 minced garlic cloves
  • Salt and pepper to taste
  • 1 14 oz. can diced tomatoes
  • 1 chopped jalapeno peppers
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Italian seasoning
  • 2 cups cooked rice
  • 1 cup shredded Parmigiano-Reggiano cheese
  • 2 cups tomato sauce

Directions:

  1. Slice the top of the peppers and place them in a large pot.
  2. Cover the peppers with salted water and boil for 5 minutes. Set aside.
  3. Heat the olive oil in a large skillet.
  4. Brown the beef, onion, and garlic for 5 minutes and drain the fat.
  5. Stir in the diced tomatoes, jalapeno pepper, Worcestershire sauce, Italian seasoning, and cooked rice.
  6. Add half a cup of water and simmer for 10 minutes.
  7. Remove the skillet from the heat and stir in the Parmigiano-Reggiano cheese.
  8. Preheat the oven to 350 degrees.
  9. Line up the 6 peppers and stuff each with the beef/rice mixture.
  10. Transfer the peppers to a baking dish.
  11. Pour the tomato sauce over the peppers.
  12. Cover the baking dish and bake for 25 minutes.
