Ingredients:

  • 500g of Spaghetti
  • 350g of Sliced Button Mushrooms
  • 150g of Chopped Shiitake Mushrooms
  • 750g of Ground Pork
  • 750g of Premade Garlic, Mushroom, and Herb Bolognese Sauce
  • 4 Chopped Red Chilli Peppers
  • ½ Diced White Onion
  • 2 Tablespoons of Hot Sauce
  • 1 Tablespoon of Chilli Flakes
  • 1 Teaspoon of Cayenne Pepper
  • 1 Tablespoon of Olive Oil
  • 100g of Grated Parmesan Cheese (Optional)

Directions:

  1. Heat oil in a large frying pan and add the ground pork. Season the pork with cayenne pepper and brown for 4-5 minutes on a medium heat. Use a wooden spoon to break up the pork to ensure it cooks evenly.
  2. Add the button mushrooms and onion to the pan and cook for 3-5 minutes.
  3. Pour the Bolognese sauce over the browned pork and stir in the hot sauce, chilli peppers, chilli flakes, and shiitake mushrooms. Simmer the sauce for 12-15 minutes on a low heat until cooked through.
  4. Put the spaghetti into a saucepan and cook for 8-10 minutes. Drain the spaghetti and mix with the pork and Bolognese.
  5. Top with parmesan if desired.

Ingredients:

  • 100g of Porcini Mushrooms
  • 200g of Roughly Chopped Chestnut Mushrooms
  • 350g of Risotto Rice
  • 1 Chopped White Onion
  • 1 Vegetable Stock Cube
  • 200ml of White Wine
  • 3 Minced Garlic Cloves
  • 30g of Salted Butter
  • 2 Tablespoons of Olive Oil
  • 75g of Grated Parmesan
  • 25g of Chopped Parsley

Directions:

  1. Fill a large bowl with boiling water and add the stock cube. Soak the porcini mushrooms in the bowl for 10-15 minutes, then drain thoroughly and retain the stock.
  2. Heat oil in a frying pan, then mix in the garlic and onions and fry on a medium heat for 3-5 minutes.
  3. Add the porcini and chestnut mushrooms to the pan and cook for 8-10 minutes.
  4. Mix the risotto rice into the pan and cook for 2 minutes, then pour in the wine, and let it bubble up for 30-60 seconds to evaporate the alcohol.
  5. Add ¼ of the mushroom stock and let it simmer for 8 minutes. Then, remove the risotto from the heat and mix in the butter, parmesan, and parsley.

Ingredients:

  • 500g of Mini Portobello Mushrooms
  • 2 Finely Chopped Red Onions
  • 2 Tablespoons of Minced Garlic
  • 2 Finely Sliced Green Bell Peppers
  • 250g of Grated Gruyere Cheese
  • 2 Teaspoons of Chopped Parsley
  • 1 Teaspoon of Thyme

  • 500g of Sliced Mushrooms (Of Your Own Choice)

Ingredients:

  • 2 Medium-Sized Potatoes
  • 250g of Sliced Button Mushrooms
  • 125g of Sour Cream
  • 2 Teaspoons of Chopped Chives

Directions:

  1. Lightly scrub the potatoes under cold water and pat dry with a paper towel.

7. Mushroom Soup

Cooking Time: 20-25 minutes.
Yield: 4 servings.

Ingredients:

  • 800g of Sliced Mushrooms (Whichever You Prefer)
  • 550ml of Vegetable Stock
  • 125ml of Milk
  • 100ml of Double Cream
  • 2 Crushed Garlic Cloves
  • 1 Diced Onion
  • 1 Tablespoons of Olive Oil
  • 1 Tablespoon of Chopped Parsley

Directions:

  1. Add oil to a saucepan and cook the onion for 5-6 minutes on a medium heat. Then, increase the heat and add the mushrooms to the pan. Cook for 8-10 minutes and stir to prevent the mushrooms sticking to the bottom of the pan.
  2. Add the garlic to the pan and cook for 1-2 minutes, then pour in the stock. Bring the stock to a boil, then remove the pan from the heat.
  3. Use a stick blender to blitz the soup for 1-2 minutes or until the desired consistency is reached.

Cooking Time: 35-40 minutes.

Ingredients:

  • 550g of Boneless, Skinless Diced Chicken Breast Fillets
  • 450g of Sliced Mushrooms
  • 1 Finely Diced Red Onion
  • 1 Premade 400g Puff Pastry
  • 1 Egg
  • 1 Tablespoon of Sunflower Oil
  • 3 Minced Garlic Cloves
  • 3 Tablespoons of Flour
  • 125g of Soft Cheese

Directions:

  1. Preheat the oven at a medium temperature.

  5. Mix the spring onions into the pan and pour in the sauce. Bring the mixture to a boil and let it simmer for 2-3 minutes on a low-to-medium heat.

Tagliatelle is a deceptively simple dish to make at home. Whether you’re a lover of pasta or otherwise, this dish is one to enjoy.

Cooking Time: 15 minutes.
Yield: 1-2 servings.

Ingredients:

  • 100g of Quartered Mushrooms
  • 125g of Tagliatelle Pasta
  • 25g of Chopped Walnuts
  • 2 Sliced Spring Onions
  • 1 Sliced Courgette
  • 2 Crushed Garlic Cloves
  • 1 Teaspoon of Chilli Powder
  • 1 Teaspoon of Chopped Thyme
  • 1 Tablespoon of Olive Oil
  • The Juice of 1 Lemon
  • 1 Tablespoon of Chopped Parsley
  • Salt and Pepper for Seasoning

Directions:

  1. Put oil in a frying pan and heat at a low temperature.
  2. Add the mushrooms and ½ teaspoon of black pepper to the pan and cook for 3-5 minutes. Then, remove the mushrooms from the pan and set them aside for a few moments.
  3. Add spring onions and garlic to the pan and cook for 1-2 minutes on a medium heat. Mix the thyme, chilli powder, and courgettes into the pan and cook for 5-7 minutes.
  4. Put the pasta into a pan and cook for 5-7 minutes, then drain with a colander.
  5. Add the mushrooms to the pan, alongside the pasta, lemon juice, ½ teaspoon of salt, and walnuts.
  6. Stir well to combine and finish with a sprinkle of parsley on top.

20. Ham, Leek, and Mushroom Pasta Bake

Delicious and very simple, this pasta bake is easily adaptable. A perfect meal for busy weeknights and all the family.

Cooking Time: 20-25 minutes.
Yield: 4-6 servings.

Ingredients:

  • 750g of Penne Pasta
  • 350g of Halved Button Mushrooms
  • 4 Chopped Leeks
  • 100g of Unsalted Butter
  • 200g of Grated Mature Cheddar Cheese
  • 175g of Chopped Ham
  • 750ml of Milk
  • 100g of Flour
  • 4 Finely Chopped Spring Onions
  • 100g of Grated Parmesan Cheese
  • Salt and Pepper for Seasoning

Directions:

  1. Preheat the oven to a low-to-medium temperature.
  2. Put the pasta and leeks into a pot and fill ¾ of the way with water. Bring the pot to a boil, then cook the pasta on a simmer for 7-8 minutes. Drain thoroughly when ready and pour into a baking dish.
  3. Add ¾ of the butter to a pan and melt on a low heat. Add the mushrooms to the pan and cook for 3-5 minutes.
  4. Remove the mushrooms when ready and add to the pasta.
  5. Wipe the pan down and add the rest of the butter to the pan.
  6. Melt the butter for 1-2 minutes and cook the onions for 1-2 minutes. Add the flour and cook for 30-60 seconds, then slowly add the milk, stirring constantly until it becomes a sauce.
  7. Turn up the heat and let the sauce simmer gently for 2-3 minutes. Continuously stir until the sauce thickens, or for 3 minutes.
  8. Remove the pan from the heat, then gradually add the cheese and stir vigorously until it melts. Mix in the ham and add a pinch of pepper and salt.
  9. Pour the sauce over the pasta and leeks and add the spring onions. Mix thoroughly to combine and sprinkle the parmesan on top.
  10. Cook the pasta for 12-15 minutes on a medium heat.
