It is difficult to beat the convenience of one-pot meals. It ensures that everyone gets their protein and vegetables together. And there is only one pot to clean. It’s so easy!

1. Hungarian Goulash

This is a family and company favorite. Serve over egg noodles and with sour cream. Using lard to brown the meat greatly intensifies the flavor, but olive oil is okay.

Cooking Time: 1 hour 40 minutes.
Yield: 4 servings.

Ingredients:

  • 2 tbsp. lard
  • 3 lb. cubed chuck roast
  • Salt and pepper to taste
  • 1 large, chopped onion
  • 3 minced garlic cloves
  • 1 chopped green bell pepper
  • 3 tsp. Hungarian paprika or to taste
  • 1 tsp. herbs de Provence
  • 2 cups beef broth
  • 2 tbsp. tomato paste
  • 1 bay leaf

Directions:

  1. Melt the lard in a large pot.
  2. Season the beef with salt and pepper and brown for 5 minutes.
  3. Add the onions, garlic, and bell pepper to the pot and sauté for 5 minutes.
  4. Stir the vegetables into the pot and add the paprika, herb de Provence, beef broth, tomato paste, and bay leaf.
  5. Stir well to combine the ingredients.
  6. Bring the liquid to a boil.
  7. Reduce the heat to a simmer and cook for 1 ½ hour.
  8. Discard the bay leaf.

Ingredients:

  • 1 medium head cabbage
  • 1 lb. ground beef
  • Salt and pepper to taste
  • ½ tsp. garlic salt
  • 1 cup cooked rice
  • 1 chopped onion
  • ½ cup unflavored Panko breadcrumbs
  • 1 beaten egg
  • 2 cups tomato sauce
  • ¼ cup tomato puree
  • 1 tbsp. white sugar

Directions:

  1. Remove the loose leaves from the cabbage and cook in a pot of boiling salted water for 15 minutes.
  2. Drain the water and let the cabbage cool.
  3. Combine the beef, salt, pepper, garlic salt, rice, onion, breadcrumbs, and egg in a bowl.
  4. Divide the beef mixture between six cabbage leaves.
  5. Fold the leaves and tuck in the sides to close.
  6. Place the cabbage rolls in a large pot.
  7. Add the tomato sauce, tomato puree, and sugar.
  8. Make sure there is enough sauce to cover the cabbage rolls.
  9. Simmer for 50 minutes while keeping an eye on the liquid.

3. Great Chili

Definitely serve this chili with some warm cornbread. Keep in mind you can control the heat and spiciness of the chili with the amount of spices you add. This recipe is fairly mild.

Cooking Time: 1 hour 35 minutes.
Yield: 6 servings.

Ingredients:

  • 2 tbsp. olive oil
  • 1 lb. ground beef
  • 1 chopped onion
  • 4 cups tomato sauce
  • ¾ cup water
  • ½ tsp. chili powder
  • ¼ tsp. garlic powder
  • ½ tsp. cumin
  • 1 tsp. brown sugar
  • 1 tsp. Worcestershire sauce.
  • 2 cups drained canned kidney beans
  • 1 cup shredded cheese

Directions:

  1. Heat the oil in a large pot.
  2. Brown the beef and onion for 5 minutes.
  3. Pour in the tomato sauce, water and add the chili powder, garlic powder, cumin, brown sugar, and Worcestershire sauce.
  4. Cover the pot and simmer for 1 hour.

Ingredients:

  • 2 tbsp. olive oil
  • 3 ½ lbs. beef chuck pot roast
  • Salt and pepper to taste
  • 1 tsp. Montreal steak seasoning
  • 1 diced green bell pepper
  • 1 cup diced onion
  • ½ tsp. oregano
  • ½ tsp. thyme
  • 1 cup beef broth
  • ½ lb. fingerling potatoes
  • 1 cup diced carrots

Directions:

  1. Preheat the oven to 275 degrees.
  2. Heat the olive oil in a large pot.
  3. Season the pot roast with salt, pepper, and Montreal Steak seasoning.
  4. Brown the roast for 5 minutes.
  5. Transfer the roast to a platter.

Ingredients:

  • 1 tbsp. olive oil
  • 1 sliced onion
  • 1 peeled and thinly sliced carrot
  • 3 tbsp. soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. grated ginger
  • 2 tbsp. brown sugar
  • 1 tbsp. dry sherry
  • 2 tbsp. rice vinegar
  • ½ lb. thinly sliced steak
  • Salt to taste
  • 2 cups cooked rice

Directions:

  1. Heat the olive oil in a skillet and sauté the onion and carrot in a large skillet for 1 minute.

  • 1 tbsp. olive oil
  • 1 ½ lb. beef stew meat
  • 3 tbsp. flour
  • Salt and pepper to taste

  • 3 cups beef broth
  • 12 oz. Guinness beer
  • 1 tsp. sugar
  • ½ tsp. thyme

Directions:

  • 1 chopped onion
  • 2 14 oz. cans Thai coconut milk
  • 1 chopped onion

  3. Stir in the fish sauce, and brown sugar, and add the broth while continuing to stir.

  6. Transfer the shredded chicken and lime juice into the pot and simmer for 5 minutes.

9. New England Clam Chowder

Cooking Time: 20 minutes.

Ingredients:

  • 1 cup chopped ham
  • 2 chopped onions
  • 1 ½ cup clam juice
  • 1 cup chicken broth
  • 4 peeled and cubed red potatoes
  • Salt and pepper to taste
  • ½ tsp. Old Bay seasoning
  • ½ tsp. garlic powder
  • 2 cups half-and-half

Directions:

  1. Heat the olive oil in a large skillet.

20. Sausage and Shrimp Gumbo

This is a savory, spicy gumbo. Keep in mind that the roux is the basis of a perfect gumbo, so take your time and don’t rush it.

Cooking Time: 1 hour 30 minutes.
Yield: 8 servings.

Ingredients:

  • 1 cup butter
  • 1 ½ cup flour
  • 1 diced onion
  • 1 diced green bell pepper
  • 4 chopped celery stalks
  • 1 chopped and seeded jalapeno pepper
  • 1 lb. chopped andouille sausage
  • 1 tbsp. Cajun seasoning
  • 3 minced garlic cloves
  • Salt and pepper to taste
  • 4 cups chicken stock
  • 2 cups Rotel tomatoes
  • 1 lb. peeled and deveined shrimp
  • 10 oz. thawed chopped okra

Directions:

  1. Combine the butter and flour in a pot and stir for about 20 minutes at a low temperature. This is the all-important roux.
  2. Stir in the onion, green bell pepper, celery, and jalapeno pepper and cook for 5 minutes.
  3. Add the sausage and brown for 5 minutes.
  4. Season with Cajon seasoning, garlic, salt, and pepper, and stir for 2 minutes.
  5. Add the chicken stock and Rotel tomatoes and simmer for 45 minutes.
  6. Stir in the shrimp and okra and simmer for 10 minutes – make sure the shrimp is not overcooked.
