Cooking Time: 20-25 minutes.

Ingredients:

  • 250g of Tinned Tuna in Water
  • 500g of New Baby Potatoes
  • 2 Crushed Garlic Cloves
  • 1 Diced Onion
  • 1 Sliced Cucumber
  • 3 Tablespoons of Chopped Parsley
  • 3 Tablespoons of Lemon Juice
  • 4 Sliced Tomatoes
  • Salt and Pepper for Seasoning

Directions:

  1. Mix the onions, garlic, parsley, and lemon juice in a salad bowl and set in the fridge to chill.
  2. Rinse the potatoes under cold water and put into a pot. Fill the pot ½ way up with cold water and bring to a slow boil. Let the potatoes cook until they’re tender or for 15-20 minutes.
  3. Drain the potatoes thoroughly and add them to the salad bowl to soak up the dressing for 5 minutes.
  4. Thoroughly drain the tuna and add to the bowl, along with tomatoes and cucumber, and season with pepper and salt.

  • 100g of Chopped Hazelnuts
  • 450g of Tinned, Drained Tuna

  • The Juice of 1 Lemon
  • 8 Fresh Lettuce Leaves

Ingredients:

  • 150g of Tinned, Drained Tuna
  • 150g of Quinoa
  • 2 Peeled, Stoned, and Chopped Avocado
  • 250g of Quartered Tomatoes
  • 75g of Crumbled Feta Cheese
  • 100g of Torn Spinach Leaves
  • The Juice of 1 Lemon
  • 4 Tablespoons of Olive Oil
  • 1 Tablespoon of White Wine Vinegar
  • Salt and Pepper for Seasoning

Directions:

  1. Pour the quinoa into a colander and run cold water through it. Once the quinoa is rinsed, put it into a pan and fill with enough water to cover the quinoa.

Cooking Time: 25-30 minutes.
Yield: 4 servings.

Ingredients:

  • 4 Tuna Steaks
  • 350g of New Baby Potatoes
  • 200g of Green Beans
  • 100g of Crumbled Feta Cheese
  • 6 Quartered Tomatoes
  • 1 Finely Sliced Cucumber
  • 4 Eggs
  • 350g of Baby Gem Lettuce Leaves
  • 2 Finely Sliced Green Peppers
  • 5 Finely Chopped Spring Onions
  • 1 Tablespoon of Sunflower Oil
  • 4 Tablespoons of Olive Oil
  • 2 Teaspoons of Dijon Mustard
  • 2 Crushed Garlic Cloves
  • 3 Tablespoons of Red Wine Vinegar

Directions:

  1. Put the potatoes into a saucepan and fill with enough water to cover them. Bring the water to a boil, then simmer for 8 minutes.
  2. Add the green beans to the pan with the potatoes and cook gently for 4-7 minutes. Drain the potatoes and green beans thoroughly and side aside to cool down.
  3. Carefully add the eggs to the pan and fill ½ way up with cold water. Bring the pan to a boil, then let the eggs simmer for 5-7 minutes.
  4. Once cooked, run the pan under cold water for several minutes or until the eggs are cool to touch. Remove the shells and half each boiled egg and place them into a bowl.
  5. Add tomatoes, cucumber, lettuce, green peppers, and spring onions to the egg and combine.
  6. Whisk garlic, salt, vinegar, mustard, black pepper, and oil in a bowl to create a dressing.
  7. Place the tuna steak into a pan and drizzle oil over the top. Cook for 3-4 minutes on each side, then remove from the pan and rest for 5 minutes, before slicing into strips.
  8. Chop the potatoes and add them to the salad bowl, along with the sliced tuna.
  9. Top the tuna salad with the dressing and feta cheese.

Rice and tuna might be an odd combination for some; however, this dish works amazingly well. It’s fresh, tasty, and can be used as a main meal or side accompaniment.

Cooking Time: 15-20 minutes.
Yield: 6 servings.

Ingredients:

  • 350g of Tinned Flaked Tuna
  • 300g of Long Grain Rice
  • 2 Chopped Green Bell Peppers
  • 1 Finely Diced Red Onion
  • 125g of Frozen Sweetcorn
  • 1 Chopped Cucumber
  • 4 Tablespoons of Chopped Parsley
  • 12 Quartered Cherry Tomatoes
  • Salt and Pepper for Seasoning

Directions:

  1. Fill a saucepan with water and rice and heat on a medium temperature. Bring the water to a boil, then lower the heat and cover with a lid.
  2. Let the rice simmer for 8 minutes, then add the frozen sweetcorn and continue to cook for another 4-7 minutes.
  3. Remove the pan from the heat and let it stand for 5-10 minutes to cool down. Drain the rice and sweetcorn thoroughly and place in the refrigerator to cool further.
  4. In a large bowl, mix the onions, tomatoes, parsley, cucumber, peppers, tuna, sweetcorn, and rice.
  5. Season to finish.
