Ingredients:

  • 4 Slices of Mature Cheddar Cheese
  • 25g of Freshly Sliced Button Mushrooms
  • 8 Tablespoons of English Mustard
  • 4 Slices of Wholegrain Bread (Fresh Thick-Cut Bread Works Best)
  • 10g of Unsalted Butter
  • ½ Diced White Onion
  • 4 Asparagus Stalks
  • 2 Tablespoons of Sunflower Oil
  • Salt and Pepper for Seasoning

Directions:

  1. Pour sunflower oil into a skillet and gently heat.
  2. Wash the asparagus, onions, and mushrooms and add them to the pan. Lightly cook for 3-5 minutes, or until the asparagus has wilted and onions are softened. Season with salt and pepper too.
  3. Remove the pan from the heat and place the asparagus, mushrooms, and onions to one side.
  4. Butter one side of the bread and place in the pan. Gently toast for 2-3 minutes on a low heat.
  5. Remove the toasted bread and spread the mustard on the other side, followed by a layer of cheese, onions, mushrooms, and asparagus. Top with more cheese.
  6. Put the top bread slice over the cheese and place back into the pan.
  7. Toast each side for 4-5 minutes or until the cheese has melted fully.
  8. Remove from the heat and slice in half.

A perfect sandwich for the summer months and those looking to enjoy something a little different.

Cooking Time: 15-20 minutes.
Yield: 2 servings.

Ingredients:

  • 100g of Finely Chopped Basil
  • 250g of Sliced Mozzarella Cheese
  • 300g of Fresh, Halved Strawberries
  • 15ml of Olive Oil
  • 2 Tablespoons of Balsamic Vinegar
  • 25ml of Sugar
  • Salt and Pepper for Seasoning
  • 4 Slices of Wholegrain Bread
  • 4 Teaspoons of Dijon Mustard

Directions:

  1. Preheat the oven on a medium temperature.
  2. Place the strawberries in a bowl and mix with sugar, salt, pepper, balsamic vinegar, and oil. Lightly toss to combine.
  3. Spread the strawberries on baking tray and cook on a low heat for 15 minutes. Remove and set aside.
  4. Place the bread on a baking tray and spread the mustard on each slice. Top with the cheese and strawberries.
  5. Put the bread in the oven and cook for 3-5 minutes. Remove and top with the basil.

19. Fried Eggs and Mushroom Served on Sourdough Bread

A delicious combination that is easy to prep at home. It makes a great lunch or breakfast sandwich, as well as a light dinner option too.

Cooking Time: 10-15 minutes.
Yield: 2 servings.

Ingredients:

  • 100g of Fresh, Sliced Mushrooms
  • 1 Sliced Red Onion
  • 1 Tablespoon of Chopped Garlic Cloves
  • 2 Eggs
  • 100ml of Olive Oil
  • 125ml of White Wine
  • 2 Teaspoons of Crushed Peppercorns
  • 2 Teaspoons of Black Pepper
  • 2 Teaspoons of Salt
  • 4 Tablespoons of Chopped Parsley
  • 4 Slices of Sourdough Bread

Directions:

  1. Add oil to a skillet pan and place on a medium heat. Carefully add the onions, mushrooms, salt, pepper, parsley, garlic, and peppercorns. Cook for 3-5 minutes and stir frequently.
  2. Turn to a low heat and carefully add the wine. Continue to cook the mushrooms for 8-10 minutes or until the wine has evaporated.
  3. While the mushrooms are cooking, take a frying pan, drizzle oil on the bottom, and crack the eggs. Cook for 2-3 minutes.
  4. Remove the mushrooms and eggs from the heat and butter the bread.
  5. Add the mushrooms to the bottom and place the egg on top.

20. Red Pepper, Basil, and Tomato Veggie Supreme Sandwich

A tasty sandwich with plenty of flavour. You’ll love the slightly hot kick to it.

Cooking Time: 8-12 minutes.
Yield: 2 servings.

Ingredients:

  • 1 Sliced Red Bell Peppers
  • 1 Sliced Green Bell Peppers
  • 2 Red Finely Diced Chili Peppers
  • 2 Green Sliced Chili Peppers
  • ½ Finely Diced White Onion
  • ½ Sliced Red Onions
  • ½ Finely Diced Mango
  • 2 Whole Beef Tomatoes
  • 2 Sliced Tomatoes
  • 4 Tablespoons of Chopped Basil
  • 1 Teaspoon of Cumin
  • 2 Teaspoons of Hot Sauce
  • 1 Teaspoon of Chili Powder
  • 1 Tablespoon of Sunflower Oil
  • 2 Teaspoons of Cayenne Pepper
  • 2 Teaspoons of Sea Salt
  • 2 Teaspoons of Black Pepper
  • 4 Slices of Mature Cheddar Cheese

Directions:

  1. In a small bowl, mash the beef tomatoes and add a sprinkle of hot sauce, chili powder, and cumin. Add half of the finely diced onions, red chili peppers, and diced mango to create a simple accompaniment.
  2. On a baking tray, spread out the red and green bell peppers and drizzle with sunflower oil, cayenne pepper, basil leaves, black pepper, and sea salt. Lightly roast the peppers for 6-8 minutes in the oven.
  3. Once cooked, remove the peppers from the oven and set to one side.
  4. Butter the bread with unsalted butter and layer with cheese, red onions, tomatoes, and peppers. Top with chili peppers and serve with the mango and tomato accompaniment.
