Step 1: Cook the Shrimp: Bring a pot of salted water to a boil. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Drain the shrimp and immediately transfer to an ice bath to stop the cooking process.
Step 2: Chop the Shrimp: Once the shrimp are cooled, drain them well and pat dry with paper towels. Roughly chop the shrimp into bite-sized pieces.
Step 3: Prepare the Dressing: In a medium bowl, whisk together the mayonnaise, lemon juice, Old Bay seasoning, salt, and black pepper until smooth.
Step 4: Combine Ingredients: Add the chopped shrimp, celery, and red onion to the bowl with the dressing. Gently stir to combine, ensuring all the shrimp is coated with the dressing.
Step 5: Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve the shrimp salad on lettuce leaves, in sandwiches, or with crackers.
Optional: For a spicier kick, add a pinch of cayenne pepper to the dressing. For a lighter version, substitute Greek yogurt for half of the mayonnaise.
