Directions:

  1. Heat oil in a skillet pan on a low heat.

  3. Place the onions and carrots in the pan and cook until soften, usually 3-5 minutes on a medium heat.
  4. Remove the skillet from the heat and carefully mix in the pork and spring onions. Cook for 5 minutes or until cooked through.
  5. Pour in the Sriracha and hoisin sauce and stir the pork mixture to combine with the vegetables.

Ingredients:

  • 1lb of Ground Pork
  • 400g of Ground Bacon
  • 2 Tablespoons of Five-Spiced Seasoning
  • 10g of Minced Garlic
  • 1 Diced White Onion
  • 2 Large Diced Carrots

  • Cooking Spray

  • 400g of Ground Pork
  • 250g of Long Grain Rice

  • 800g of Ground Pork

  • 1 Red Diced Onion
  • 250ml of Tomato Sauce

  • 1 Pint of Tomato Cooking Sauce
  • 25g of Chopped Basil

  • 200ml of Sour Cream
  • 75g of Cottage Cheese
  • Pre-Made Lasagne Sheets
  • 100g of Parmesan Cheese

  • 2 Tablespoons of Hot Mustard
  • ½ Pint of Tinned Tomato Cooking Sauce

Directions:

  1. Pour the pasta into a large pot and fill ¾ of the way with water. Bring it to a slow boil, then cook the past for 10 minutes.
  2. Place the pork and onions into a skillet and sear for 2-5 minutes.
  3. Stir in the onion, broccoli, and spinach, and pour in the red wine. Let the pork simmer and reduce for 10-15 minutes on a low-to-medium heat.
  4. Drain the pork and add the tomato sauce. Season and bring to a boil.
  5. Drain the pasta and mix into the pork and tomato sauce mixture.
  6. Reduce the heat and add in the sliced tomatoes and crushed chili flakes. Continue to cook the pork and pasta for another 6-8 minutes.
  7. Slice the baguette and smear on garlic butter and cook in the oven for 5 minutes.
  8. Remove from the oven and plate up with a dash of hot mustard.

Casseroles are simple but require little effort and are super easy to prepare too. Best of all, there are lots of accompaniments to cook alongside the pie.

Cooking Time: 35-45 minutes.
Yield: 2-4 servings.

Ingredients:

  • 2lb of Ground Pork
  • 250g of Sliced Button Mushrooms
  • 100g of Roughly Chopped Fresh Mushrooms
  • 300g of Peeled Potatoes
  • 175ml of Fresh Cream
  • 15g of Crushed Black Peppercorns
  • ¼ Finely Diced Red Onion
  • Pre-Made Puff Pastry
  • Salt and Pepper for Seasoning
  • 2 Tablespoons of Olive Oil
  • 100g of Green Beans
  • 75g of Peas and Carrots Mixed
  • 2 Teaspoons of Cumin
  • 2 Teaspoons of Turmeric
  • 50g of Grated Mild White Cheese

Directions:

  1. Set the oven to 180 degrees Celsius.
  2. In a skillet, heat olive oil on a low temperature. Add in the pork and cook until browned or for 4-6 minutes.
  3. Slice the potatoes and put in a pot with cumin and turmeric. Gently cook for 5-8 minutes. Drain and set aside.
  4. In a pan, add the carrots, peas, green beans, and button mushrooms. Cook for 3-5 minutes.
  5. Drain the vegetables and mix in with the pork. Stir in cheese and blend well to combine the mixture.
  6. Grease an oven-safe pie or circular dish, and layer with potatoes, then add a layer of the pork and vegetable mix. Repeat and top with a layer of potatoes.
  7. In a pan, heat oil and gently cook mushrooms and the red onions until soft. Add cream and peppercorns, and simmer for 2-4 minutes.
  8. Once cooked, pour the creamy sauce over the casserole.
  9. Bake the casserole for 30 minutes.
  10. Line a baking tray with kitchen foil.
  11. Roll out the pre-made puff pastry slices and cut into long rectangular shapes. Place on the baking tray and cook for 8-12 minutes.
  12. Serve the pastry with the pie.

Bakes are fantastic because they don’t require much attention and can be adapted to suit everyone’s need.

Cooking Time: 45 minutes.
Yield: 4-6 servings.

Ingredients:

  • 3lb of Ground Pork
  • 250g of Streaky Bacon
  • 175g of Sweetcorn
  • 4 Large Chopped Spring Onions
  • 3 Large Diced White Onions
  • 2 Roughly Sliced Green Peppers
  • 2 Roughly Sliced Red Peppers
  • 200g of Broccoli Florets
  • 2 Grated Carrots
  • 250g of Edam Cheese
  • 200g of Breadcrumbs
  • 2 Minced Garlic
  • 3 Tablespoons of Paprika
  • 75ml of Olive Oil
  • ½ Chopped Cabbage
  • 100ml of Milk
  • 50ml of Cream
  • 100g of Grated Cheddar Cheese
  • Salt and Pepper for Seasoning

Directions:

  1. Preheat the oven.
  2. Heat oil in a skillet pan and sauté garlic, onions, and peppers.
  3. Reduce the heat and add in the pork. Sprinkle paprika over and brown for 6-8 minutes.
  4. Add the sweetcorn, spring onions, broccoli, and carrots to the pork and cook for 2-4 minutes.
  5. In a second skillet, cook the bacon for 3-5 minutes.
  6. Grease an oven-safe baking dish with oil or butter and mix in the pork and vegetables. Stir in cheese and combine to mix.
  7. Pour milk and cheddar cheese in a small saucepan and gently heat to create a sauce. Add the cream and cook for 4 minutes on a low temperature.
  8. Remove the pan from the heat and pour over the vegetables and pork.
  9. Place the pork in the oven and bake for 25-30 minutes.
  10. Remove from the oven and sprinkle the cheese and breadcrumbs over the top and cook for another 8-10 minutes.

19. Chickpea and Pork Curry

Curries are super easy to make and can be adapted to be as hot or as mild as required.

Cooking Time: 1 hour 15 minutes.
Yield: 4-6 servings.

Ingredients:

  • 3lbs of Ground Pork
  • 4 Tablespoons of Minced Garlic
  • 650g of Chickpeas
  • 25g of Curry Powder
  • 50g of Curry Paste
  • 2 Tablespoons of Crushed Black Peppercorns
  • 2 Teaspoons of Chili Powder
  • 3 Chopped Red Peppers, Seeds Optional (depending on how hot you want to make the curry)
  • 2 Large Diced White Onions
  • 75ml of Sunflower Oil
  • 2 Chopped Red Chili Peppers
  • 3 Teaspoons of Cumin
  • 50ml of Fresh Cream
  • 350g of Long Grain Rice
  • ½ Bottle of Red Wine

Directions:

  1. Place the chickpeas in a large pan and fill ¾ with water. Cook on a medium heat for 12-15 minutes – or until cooked.
  2. Heat oil in a skillet or wok on a medium temperature and add in the pork and red wine. Cook for 15-20 minutes.
  3. In a pan, cook the red peppers and onions for 4-6 minutes on a low heat. Stir into the pork once cooked.
  4. Add curry paste, cumin, garlic, chili powder, and peppercorns to the pork and let the mix simmer for 2-4 minutes.
  5. In a large saucepan, mix in curry powder and water, making the sauce as thin or thick as required. Cook for 5 minutes.
  6. Heat oil in a second skillet and fry the rice until browned or 8-10 minutes. Drain and set aside.
  7. Pour the drained chickpeas into the pork and combine with the pork.
  8. Pour the curry sauce into the pork and chickpeas and simmer for 2-4 minutes on a low heat. Mix in the cream and chili peppers.
  9. Remove the curried pork and chickpeas from the heat and serve with fried rice.

20. Sweet Potato and Pork Chili

With a Tex-Mex-inspired flavour combo, this chili dish is great for a lazy lunch or a delightful dinner.

Cooking Time: 20-30 minutes.
Yield: 2-4 servings.

Ingredients:

  • 1lb of Ground Pork
  • 450g of Diced Sweet Potatoes
  • 2 Diced Red Onions
  • 1 Diced Red Pepper
  • 1 Diced Green Pepper
  • 2 Tablespoons of Crushed Chili Flakes
  • 2 Tablespoons of Chili Powder
  • 4 Teaspoons of Paprika
  • 2 Crushed Garlic Cloves
  • 2 Teaspoons of Cumin
  • 2 Teaspoons of Chopped Oregano
  • 75ml of Olive Oil
  • 450g of Chopped Tomatoes
  • 50g of Chopped Coriander
  • 125g of Wholegrain Rice
  • 100g of Sour Cream
  • 1 Juiced Lime

Directions:

  1. Pour oil into a large saucepan and heat with green and red peppers, and red onions. Cover with a lid and cook on a low heat for 3-5 minutes.
  2. When the peppers and onions have softened, turn up to a medium heat and carefully add the pork. Break up the pork as it cooks and stir. Cook for 3-5 minutes.
  3. Add the paprika, oregano, cumin, garlic, chili powder, and chili flakes to the pork and continue to cook for 2-3 minutes.
  4. Add the diced sweet potatoes and tomatoes and season with salt and pepper.
  5. Bring the mix to a boil and switch to a low heat. Let the pork and sweet potatoes simmer for 20-25 minutes and stir often.
  6. Fill a second pan ¾ with water and add the rice. Bring to a boil and simmer until cooked or around 8-12 minutes.
  7. Remove the pork from the heat and stir in coriander and lime juice.
  8. Sprinkle more crushed chili flakes over the top, if required, and serve with sour cream to finish.
